If you are installing new switches in an old farm house what do you do if there aren’t any ground wires?

How old is the bigger question? Your boxes should be metal. So, in that case, you’ll want to see if they are grounded using a voltage tester. If they are then you would install a screw / pigtail ground wire from the box to your switch or outlet.
If the box is not grounded, then upgrading your electrical system would be a great idea.
