1. I am laying Ceramic tile in a 5X5 Entrance area. Should I use Ready Mix
thin set and grout?
2. While laying tile in a large area, do you continue to lay tile while working off of tile you just layed?

No never if you want a good job. Just mix both of them. It’s easy as can be.
No, you would lay the new tile and continue to work off of the joining areas without ever touching the tile you just layed. Not even a little bit. Come back the next day and work off of the new tile to set the grout.
